We caught up with the Group Executive Chef, Ronald Ramsamy as he took us into his kitchen to meet up with his talented and passionate team. First up was Muhammad who takes care of all the Halaal foods and specializes in Indian cuisine. With 20 years experience, starting with his family business in Lahore, he has trained several chefs at Sun International to perfect the art of Indian cuisine. His favourite remains butter chicken and his secret ingredient lies in the cashew nut sauce. His methodology on making paneer (Indian Cottage Cheese) from scratch was so inspiring as one can often get it so wrong.
Exciting Sous Chef, Justin although Indian in origin says the cliché is to cook Indian food because of his origin and has used this to continuously trick his clients in conjuring up the most creative dishes and specializes in pastries. He prepared the most amazing Vegetable Tart packed with the freshest of ingredients he sources from a Sun International farm supplier and is absolutely passionate about his ingredients and how freshly picked they are. It was a feast on the eyes and Justin bears testimony that we indeed do eat with our eyes. He claims his signature is about serving dishes that creates a lasting memory.
Ronald Ramsamy has the ability to be in 3 places at once as he danced around his chefs, tasting and directing. His success story is based on key collaborations as he believes in communication to ensure the team is always delivering their best and allows a free reign in creativity to constantly keep Sun International clients coming back for more. He recognizes his team’s strengths and areas of specialization as he started his career at Sun International as a trainee. He says: “ I am a product of Sun International and my journey to becoming the Group Executive Chef has been on how best to build the brand and to improve on the culinary experience”
